Ingredients

  • 50 ml of Restinga Gin
  • Grapefruit peel
  • 200 ml of tonic water
  • Fresh basil leaves

Method

  • 01 / Fill a balloon glass to the brim with good, large, compact ice.
  • 02 / Cool the glass until it is cold and strain out the excess water.
  • 03 / Perfume with a twist of ruby grapefruit peel, squeezing it gently to extract the aromas and essential oils it contains, which will perfume much more than a slice of the same fruit. Place the twist in the glass.
  • 04 / Add 50 ml of Restinga gin.
  • 05 / Stir lightly to chill our gin.
  • 06 / Slowly pour the tonic water down the side of the glass, although the most professional way to do this is to use a mixing spoon which will bring the bubbles to life.
  • 07 / Decorate with fresh basil leaves.
