Juniper
Junipers are coniferous trees or shrubs, belonging to the Cupressaceae family.
Juniper berries are somewhat bitter, with citrus and sweet nuances. The berries of these shrubby conifers are responsible for the essence of this drink, its characteristic bitter and intense flavor. To a large extent, the quality of a gin is due to the properties of the juniper used to rectify the distilled barley.

Grapefruits
The perfect blend of sweet and sour. The evergreen tree grows up to 15 meters tall and thrives in a warm, frost-free climate. The football-sized fruit is slightly pear-shaped, with a rind of varying shades of white, yellow, and ruby. In terms of flavor, the more wrinkled the rind, the sweeter the fruit.

Cardamom
Cardamom's flavor is very intense and penetrating, sweet, and slightly spicy. It's reminiscent of citrus fruits, due to the limonene in its essential oil, and eucalyptus, due to its high cineole content.

Allspice
Allspice grows in bunches that are harvested while still green. They are left to dry in the sun, at which point they acquire their characteristic brown color. The flavor is slightly spicy and reminiscent of a combination of cloves, nutmeg, and cinnamon.
